  • 1/3 small glasses Thai red curry paste
  • One can of chickpeas, drained and rinsed
  • Kosher salt
  • 13 ounce can unsweetened coconut milk

Directions:

  1. Peel the squash, cut it lengthwise into two, and pull the seeds. Cut the top where it meets the round base. Cut bulb up to 3 / 4- inch-wide slices. Cut the end neck into a 1/2-inch-thick half-moon. Heat a large pan on medium-high heat. Add the canola oil, then add the curry paste and stir about 1 minute, or until fragrant.
  2. Add the squash and mix well with the curry paste. Enter the beans and season with salt. Add the coconut milk and 3/4 glasses of water and bring to a boil. Reduce heat to medium-low, cover, and simmer for about 10 minutes, or until the squash begins to soften.
