By: Amy

Ingredients:

  • 1 medium sweet potato
  • Breastmilk, or formula milk, or water

Directions:

  1. Let’s prepare the sweet potato first. Use a medium saucepan and heat water over medium heat until it is boiling. Meanwhile, wash the sweet potato under cold running water. Scrub the skin using vegetable brush to remove all the dirt on it. After scrubbing, rinse the sweet potato once again and dry using clean cloth. When the skin is clean and dry, peel the skin using fruit peeler and cut it into bite size pieces. If you plan to bake or microwave the sweet potato, do not peel the skin and don’t cut it into chunks.
  2. Turn down the stove heat to low until the bubbles are soft enough. Add the sweet potato chunks into the water and let it cooks until the sweet potato are soft. It should take around 15 minutes. For sure, check the texture using fork. If you can get into the middle of the chunks easily and it falls down when you pull up the forks, it is ready. Remove from heat and drain the sweet potatoes. Rinse with sterile cold water to stop the cooking process.
  3. For baking: Poke some holes in the sweet potato and wrap it using thin foil. Transfer sweet potato to a baking dish and place it in the oven. Bake for around 30 to 60 minutes until it is soft. Bake over 400° Fahrenheit. When it is soft already, remove from the oven and let it cool for a while. Slit it lengthwise and scoop the meat using spoon.
  4. For microwave sweet potato: Wrap the sweet potato using microwave proof plastic and poke the plastic several times. Transfer the sweet potatoes to the microwave and cook for around 10 minutes or until it is soft. Let it cool for a while and slit lengthwise. Scoop the meat, set aside.
  5. Put the sweet potato into a food processor or blender. Process until it is smooth. You can add water or breast milk as needed so you can reach the targeted consistency. Transfer the puree into feeding bowl. Your sweet potato puree is ready to serve.

Notes:

  • Tips for choosing the right sweet potato. Sweet potatoes are always available the whole year. However, its peak growing season is during the fall. This is time when you get the best variety. When choosing sweet potatoes, make sure to choose one with no cracks on it. It is also important to get one with no soft spots, because soft spots indicate unfit veggie. Good sweet potato is firm and it looks and feels whole.
  • If your baby already mastered single puree menu, you can add several other ingredients on it. For great combination you can add chicken, beef, green beans, peas, broccoli, lentils, rice, peaches, butternut squash, full fat Greek yogurt, applesauce, raisins, and a dash of cinnamon.
  • If you want to start giving your baby finger food, you can give the soft chunks and skip the food processor phase.
