How to Make Keto Green Chile Chicken Enchiladas

To make this dish, you only need to prepare the ingredients, cook the chicken, wrap it in zucchini, pour the sauce, bake on the oven, and you can directly enjoy it. You need zero skill to make this dish and the good news is you can always freeze this dish to enjoy it later.

Ingredients:

  • 3 to 4 cooked chicken breasts, boneless and skinless, shredded
  • ¼ tsp pepper
  • ¼ tsp salt
  • ¼ tsp cumin
  • ½ tsp garlic powder
  • 1 cup cheddar cheese, shredded
  • 14 oz green chilies, chopped
  • 18 oz cream cheese softened
  • ½ cup salsa verde
  • 8 soft keto flour tortillas
  • Olive oil
  • Fresh cilantro, chopped, for garnish
  • Tomatoes, chopped, for garnish

Directions:

  1. Preheat the oven to 350 degrees F. While waiting for the oven, coat the chicken with salsa verde. Take the tortilla and fill it with the chicken and 1 to 2 tablespoons of shredded cheese. Roll it tightly and continue until the chicken are all wrapped in tortillas. Place the chicken in a 9” x 13” baking dish that has been sprayed with olive oil.
  2. Make the sauce by combining the softened cream cheese, cumin, pepper, salt, garlic powder, and green chilies in a blender. Blend the ingredients until you get a creamy sauce. Or if you still want to have some texture, you can mix the ingredients in a bowl and stir it evenly. Pour the sauce on top of the enchiladas and top it again with the remaining cheese.
  3. Bake it in the preheated oven for around 25 to 30 minutes, or until the cheese turns golden brown. Serve the dish warm with the chopped cilantro and tomatoes or you can add your favorite topping.
