I absolutely love Mexican food.

They definitely fall into one of my favorite things to make for dinner.

In the past we have made chicken tacostaco soupstuffed bell peppers, and now Instant Pot flank steak fajitas.

Instant Pot Flank Steak Fajitas

Since opening my Instant Pot I have wanted to give sous vide cooking a try, but to be honest I wasn’t quite sure how to do it.

I had heard that sous vide makes meat fall apart soft.

And OMG yaas. These pressure cooker steak fajitas were absolute perfection.

It was definitely an adventure learning this new cooking method!

I must warn y’all though, sous vide cooking definitely was not an “instant” method of cooking.

While sous vide cooking does take quite some time, it is an awesome cooking method for infusing a ton of flavor.

What is Sous Vide?

Sous vide (pronouced sue veed) is a fancy pants way of saying a method where even the worst of cooks cannot mess this up. ha.

Ok well kinda…

Sous vide is French for “under vacuum” and it is a low maintenance method of cooking in a water-controlled bath.

The awesome part about cooking in a water bath is that you are in complete control of the temperature. If you set it at 140 degrees, there are no other factors that will take it above 140 degrees which means your meal will cook without overcooking.

It’s brilliantly easy and definitely worth giving a try.

How to Sous Vide in Your Instant Pot

If you own the Instant Pot Smart Bluetooth then you are in luck! All you need to do is some calibration and you are good to go! You can read how to calibrate your Smart Bluetooth for sous vide here.

Since I do not own that model I used this nifty little device – an immersion circulator to keep the water moving and control the temperature.

  • 1 Instant pot


for the steak fajitas:

  • 1 flank steak (approximately 24 oz.)
  • Juice of 1 lime
  • 2 cloves of garlic, finely chopped
  • 2 tablespoons olive oil
  • 1.5 tablespoon s chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • ¼ tablespoon cayenne powder (depending on heat desired)
  • ¼ tablespoon black pepper
  • Small bunch of cilantro

for the peppers and onions:

  • 2 each, red and green peppers
  • 2 medium onions or 1 large
  • 2 tablespoon olive oil
  • ½ c. chicken broth

for the toppings:

  • 2 avocados
  • 1 lime
  • sour cream
  • pico de gallo


  • Preheat your Instant Pot Ultra or immersion circulator to 135F
  • Combine all spices, olive oil, garlic, and lime juice in a small bowl.
  • Pour this mixture into a Sous Vide bag.
  • Add the steak, turning it in the bag several times to thoroughly coat.
  • Lay the cilantro across the top of the steak, and seal the bag. It’s important here to remove as much air as possible. Vacuum sealing is preferred, but not necessary as you can also use the water displacement method. To do this, slowly lower the bag into water, keeping the open top above the surface. The water pressure will force the air out of the bag, allowing you to seal it once removed.
  • Slice the peppers into strips.
  • Halve the onions, and cut to similar size as the pepper strips, breaking apart any larger chunks that stick together.
  • Toss the veggie strips in a large bowl with the olive oil, add to another Sous vide bag, and seal. For this step more than with the steak, vacuum sealing is preferred. If that isn’t an option, you can add a scant 1/2 to 3/4 cup of chicken broth to the veggies, allowing you to use the water displacement method to effectively remove the air.
  • Submerge both bags in the Instant Pot, close the lid, and set for 2 hours.
  • Just before done, preheat your broiler. Once finished, carefully remove both bags and pat dry. Using a broiler pan, or similar sheet, cut open the veggies -discarding the broth if used -and spread them evenly over the pan, leaving room for the steak. Remove the steak, discard the cilantro, and place next to the veggies. Broil for approximately 2-4 minutes or until just starting to brown and char, turn the steak, mix the veggies with tongs, and broil for another couple minutes.
  • Transfer the steak to a cutting board and let rest for 5 minutes, then slice thinly against the grain.
  • Serve on warm flour tortillas with the peppers and onions, accompanied by avocado slices, and fresh lime wedges for squeezing.
