Guacamole Chicken Melt

The star in this dish is obviously guacamole. It is heavenly combination of avocado, lime, onion and spices. Chicken makes best protein pairing for guacamole dip. There is no time boundary to serve this dish; breakfast, lunch or dinner, guacamole chicken is great option indeed!

How to Make Guacamole Chicken Melt

To conclude cooking process, there is no special skill needed. You might need to be a little careful when pan searing the protein, but that’s it. Making guacamole is not complicated. All you need to do is scooping, squeezing and mixing. Does that sound difficult?

Ingredients:

  • 1 tablespoon of butter
  • 2 tablespoon of olive oil
  • 4 skinless and boneless chicken breasts (half cut)
  • 2 teaspoon of Creole seasoning
  • 2 avocados, peeled and pitted
  • 1 tablespoon of fresh lime juice
  • 1 small tomato, diced
  • 2 tablespoon of finely chopped red onion
  • 4 slices of jack cheese
  • Garlic powder to taste
  • Salt to taste
  • Pepper to taste

Directions:

  1. Prepare the oven beforehand. You will need it in the end of cooking process, but it is better to do preheating. Don’t forget to put inside the oven rack. Make sure to place oven rack approximately 6 inches from heat ignition.
  2. Take skillet and heat olive oil and butter. Set stove to medium heat. Pan-fry each side of chicken breast for ten minutes. Make sure both sides are cooked perfectly; no pink meat inside but has golden brown glow outside. Next, take pinch of Creole seasoning and sprinkle them on the meat. Turn off stove and let it cool down.
  3. Take avocado and spoon. Gently, scoop avocado meat and place it into separated bowl. Next, add lime juice, tomato, onion and garlic powder. Put also salt and paper to taste. Mash them together. Make sure you get balanced taste.
  4. Wear mitten and take out oven rack. Put cooked and seasoned chicken breast on it. Then, add 1/3 scoop of avocado guacamole on each chicken. Add jack cheese on top of guacamole. Wear gloves again and put oven rack on its previous place. Set timer to one or two minutes and let it broil. Your tasty dish is ready to serve.
