Main ingredients:

  • 900 gr chicken breasts, cut into several bite-sized pieces
  • One pineapple, cut into several small pieces around one inch
  • One red bell pepper, cut into several small pieces
  • One green pepper, cut into several small pieces
  • One onion, cut into chunks
  • Three tablespoons olive oil
  • 1 1/2 teaspoons cornstarch

For the marinade:

  • 50 ml pineapple juice (canned)
  • 100 ml red wine vinegar
  • 150 gr sugar
  • 45 ml ketchup
  • A tablespoon of soy sauce (low-sodium)
  • A teaspoon salt
  • A half teaspoon of garlic powder and ginger powder
  • A quarter teaspoon of red pepper flakes


  1. First of all, you need to prepare a medium bowl to combine the marinade ingredients in it. The ingredients needed to combine are the pineapple juice, red wine vinegar, sugar, ketchup, soy sauce, salt, garlic powder, ginger powder and red pepper flakes.
  2. Mix them until they are completely combined. Then, prepare a freezer bag (choose the large one) to combine 50 gr of the marinade mixture with the chicken breasts pieces. Also, add 45 gr of olive oil into the plastic bag. Combine them all and make sure the chicken pieces are evenly coated with the ingredients.
  3. For the remaining marinade mixture, you may put them in the refrigerator for around 1 to 4 hours. Then, after the marinating is done, you may thread the chicken through the skewers. Also, don’t forget to put the peppers and onions as well onto the skewers.
  4. Now, it is time to make the glaze. Simply prepare a small saucepan and heat it with one and a half teaspoons of cornstarch and the reserved marinade mixture. Stir and cook the ingredients until they are completely combined. Bring it to simmer until the texture turns slightly thickened. Then set it aside for a while.
  5. To grill the kabobs, you need to spread the oil over the grates over medium-high heat and then grill the kabobs for around 8 to 10 minutes until the chicken is cooked through. Also, make sure that the color turns quite brown with charred on it. After that, you may brush the glaze over the kabobs.
