But, unlike Indian curry that has a stong spices of cumin, etc, this Slow Cooker Thai Peanut Chicken has a strong taste that come from coconut milk, peanut butter, lime juice, ginger and garlic. The thick peanut sauce of this curry also giving a new sensation of the dish. Sounds so temping isn’t it?

Before we go to the recipe, there’s something you need to know about slow cooker. Slow cooker is a slow cooking method that use low heat to cook something. The purpose of slow cooker in this recipe is to soften the chicken and make the spices of Thai Peanut Chicken absorbed into the chicken. So, let’s just see the ingredients and directions.


  • 500 grams boneless and skinless chicken breasts, cut into big pieces
  • ½ liters of coconut milk
  • 1 tbsp of salt
  • ½ tbsp of black pepper
  • 1/3 cup creamy peanut Chicken
  • 2 tbsp of low-sodium soy sauce
  • 2 tbsp of honey
  • 1 tbsp of rice wine vinegar
  • 1 tbsp of peeled and minced ginger
  • 3 minced garlic cloves
  • 2 tbsp of cornstarch mixed with 2 tbsp of water
  • 1 tbsp of lime juice
  • ¼ cup of chopped peanuts
  • ¼ cup of cilantro or green onions


  1. First add the coconut milk, peanut Chicken, soy sauce, honey, rice wine vinegar, ginger, garlic, into the slow cooker and then mix well. After that seasons the chicken breasts with salt and pepper in a plate. Set aside then wait for 10 minutes.
  2. Turn on the slow cooker on low heat for 3 hours. 20 minutes before the time of slow cooker reach 3 hours, add the lime juice and cornstarch or water mixture into the slow cooker and stir carefully. Then continue the cooking proscess for an 20 minutes until sauce is thickened.
  3. Put the Thai Peanut Chicken to the plate. The last but not least sprinkle the garnish with desired toppings like chopped peanuts, cilantro or green onions or if you like it, you may mix it together as you topping. If you like hot taste, you can add dried chili for the garnish.
